Ingredients

One package of lasagna noodles

An onion

Fresh vegetables, eg mushroom, bell pepper, zucchini

A jar of pasta sauce

Frozen vegetables, eg spinach

Fake meat

15 or 16 oz ricotta

2 eggs

About 3 cups shredded cheese, eg mozzarella, cheddar, parmesan. The more different kinds of cheese you use the better.
Directions

Cook the noodles (if they aren't the oven-ready kind) (I'm not above using the oven-ready kind).

Make the sauce: in a saucepan, cook the onion for a minute or two. Then add the fresh vegetables. Then add sauce, frozen vegetables, and fake meat. Cook until everything is melted.

Mix the ricotta with the eggs.

Make the following pattern twice: sauce, noodles, ricotta mixture, shredded cheese.

Top with remaining sauce and shredded cheese.

Cover with tinfoil and bake at around 350 for around 40 minutes.

Remove tinfoil and bake for another 10ish minutes.
